I have often made this Spanish recipe for tortilla al horno or baked omelet with cheese, sausages, potatoes and other vegetables, especially for evenings spent with friends or family. It is a fine snack that can be easily sliced ​​and served both hot and cold.

I do not go into details about the Spanish tortilla with potatoes and eggs that can be prepared in many variants, they differ from one region to another. It can be fried in a pan (then it has a circular shape) or it can be baked in a rectangular tray in the oven. "Baked" means "in the oven". Potatoes can also be boiled beforehand or put raw, it can contain ham (ham), tuna, seafood or chorizo ​​(Spanish sausages) and the vegetables used can be onions (most often) but also tomatoes, peppers, garlic. , peas, etc.

Potato tortilla it is the simple version, most often prepared in Spain and contains only potatoes, onions and eggs. Not wrong if you put the pieces of cold steak left over from the previous days & # 8211 a good recycling idea.

Basically we are talking about an omelet in the oven full of pieces of sausages, vegetables (potatoes, onions, peppers) and a lot of cheese that melts nicely forming a crust au gratin on the surface of the tortilla.

I adapted the recipe (see video at the end) replacing the chorizo ​​sausages with local cabanos but the cheese used was Manchego (Spanish). A matured, fragrant, slightly spicy cheese that melts nicely (you can find it in supermarkets & # 8211 Lidl, Selgros). You can also use Gouda, Edam, Trapist or other similar cheeses. The right potatoes for this kind are the floury ones, with a high starch content (for puree). I used new potatoes because I had them on hand. I didn't boil them beforehand, but I baked them directly in the oven. For the rest, I used green onions and colored bell peppers. Instead you can use some fresh sliced ​​mushrooms.

From the quantities below comes a large tray of 35 x 40 cm with omelette in the oven or oven tortilla from which 8-10 people can get tired. Or 4 people who eat it 2 days in a row because I told you it is tasty and cold.

Ingredient: 10 suitable large potatoes, 2-3 tablespoons sour cream, 150 g cheese, a tablespoon butter, salt, ground pepper

Preparation: the potatoes are washed well, boiled in plenty of salted water and boiled for about 20 minutes. Drain the water and leave to cool, then cut in half and dig out the core with a teaspoon, leaving an edge of about half a centimeter. Place the peeled potatoes in a tray lined with baking paper. The core of the potatoes is mixed with butter, 75 g of grated cheese and seasoned with salt and pepper. Fill the potatoes with the resulting composition, making a hole in each with the teaspoon in which we will put the remaining cheese mixed with cream. Put the potatoes in the preheated oven for 20 minutes at 200 degrees, until nicely browned on top.

Next time you can make some baked potatoes with herbs!


Baked parsley potatoes

Wash the potatoes very well in cold water, using even a toothbrush, then mix with olive oil, salt, pepper and finely chopped parsley.

Place the potatoes in a baking tray and place the garlic cloves in them.

Put in the preheated oven at 220 degrees for 35-40 minutes.

Check with a toothpick if the potatoes are ready, and if some of them are hard inside, leave the tray in the oven for another 10-15 minutes.

They are an excellent garnish for any type of steak or can be eaten as such with a salad.


Peel a squash, grate it and squeeze the juice. Peel a squash, grate it and slice it thinly so that the potato halves sit straight in the pan.

Finely chop the parsley and mix well with the two types of cheese and sour cream. Thus filled, the potatoes are placed in a heat-resistant dish, pour water (so as not to reach the upper lip of the potatoes), then put the dish in the oven, at the right heat.

When the potatoes have boiled well, drain the excess water (if necessary), put a little butter on the potatoes and leave for another minute, then serve.

For the appearance, I also sprinkled a little paprika. In addition to potatoes, I added a few pieces of chicken (chops, wings) that I boiled beforehand and then sprinkled with rosemary, salt and pepper to taste.
NOTE: To make them tastier, put the potatoes in aluminum foil before putting them in the tray.

Potatoes with cheese and eggs are delicious. They are easy to prepare and are absolutely divine. In addition, without too much effort, you will get a delicious meal for the whole family.

Ingredients (for 12 servings):

  • 1 packet (approximately 900g) of frozen potato croquettes
  • 12 eggs
  • 1 year milk
  • 1 teaspoon dried oregano
  • 1si ½ teaspoon cumin
  • ½ teaspoon chili powder
  • ¼ teaspoon garlic powder
  • 130 g shaved cheddar cheese
  • 100 g race parmesan
  • 1 jar of tomato sauce
  • 230g sour cream
  • fresh, finely chopped coriander (to taste)
  • salt
  • pepper
  • oil for greased tray

How is it prepared

Preheat the oven to 190oC. Grease a deep pan with oil and place the potato croquettes in it.

In a large bowl add eggs, milk, oregano, cumin, garlic powder, salt and pepper and mix well until you get a homogeneous consistency. Then pour the composition over the potatoes, acasa.ro recommends.

Put the tray in the oven for 35-40 minutes or until the potatoes are well penetrated and the egg composition is well coagulated. Then add the cheddar cheese and Parmesan cheese on top and cook everything until they melt.

When ready, remove the pan from the oven and let the composition cool for 10 minutes. Add salsa, sour cream and finely chopped coriander on top.
