Stir-Fried Cauliflower

Make the chile-garlic sauce: Stir the stock, soy sauce, vinegar, toban jan, oyster sauce, honey, sambal oelek, and salt together in a medium bowl. Sprinkle the cornstarch over 1 tbsp water in a small custard cup or ramekin and stir to dissolve it.

Heat 1 tbsp of the oil in a medium saucepan over medium heat. Add the garlic and ginger and cook just until they are browned, about 30 seconds. Stir in the stock mixture and bring it to a simmer. Mix the cornstarch mixture to recombine, and stir it into the sauce.

Cook until the sauce is thickened, about 1 minute. Remove it from the heat. (The chile sauce can be cooled, covered, and refrigerated for up to 5 days.)

Bring a large pot of salted water to a boil over high heat. Add the cauliflower and cook it until it is just tender, 1 to 2 minutes.

Drain it in a colander and rinse it under cold running water. Transfer the cauliflower to a large bowl of iced water and let it cool completely. Drain it well and pat it dry with paper towels.

Heat a large wok or skillet over medium heat. Add the panko and cook, stirring occasionally, until it is toasted, about 1 minute. Transfer the panko to a plate.

Return the wok to medium-high heat. Add the remaining 2 table¬spoons of oil and heat until it is hot but not smoking. Add the pork and cook, stirring often and breaking up the meat with the side of a wooden spoon, until the pork is browned, about 3 minutes. Stir in the chile sauce. Add the cauliflower and cook, stirring often, until the cauliflower is heated through and the sauce is thicker, about 2 minutes.

Transfer the mixture to a serving dish. Top it with the toasted panko and mint and serve it hot.

Because salt is added, and salt would draw the water content out of the cauliflower. While moisture content is reduced from the cauliflower, this makes the cauliflower becomes more crunchy and slightly chewy, which makes the texture so great!

Yes, Cauliflower Stir Fry is one of my favorite side dishes whenever I visit China. They are almost available everywhere. 干锅花菜 pronounced as gān guō huā cài, literally means “dry pot“ cauliflower because there is no water added to cook the cauliflower. In a big Chinese restaurant, the cauliflower is quick-fried to hasten the cooking process, given that they have a large amount of frying oil where it is not usual practices for regular home cooks. So here I slightly modify the cooking method to suits the common practices of most home cooks!


Ingredients

  • 3 Tbs. canola oil
  • 1/4 cup dried fenugreek leaves or 1/2 cup fresh fenugreek leaves, chopped (optional)
  • 1 to 3 small dried whole red chiles (optional)
  • 1 Tbs. ground coriander, preferably freshly ground
  • 1 tsp. cumin seeds
  • 3 Tbs. minced fresh ginger
  • 1 medium jalapeño (seeds and ribs removed if you prefer a milder flavor), finely chopped
  • 2-1/2- to 3-lb. head cauliflower, cored and cut into medium florets 1 to 1-1/2 inches wide and 1-1/2 inches long (6 to 8 heaping cups)
  • 2 cups (about 10 oz.) frozen green peas (do not thaw)
  • 2 tsp. kosher salt more to taste
  • 1/4 tsp. homemade or store-bought garam masala (optional)

How to Cook Cauliflower and Beef Stir Fry Recipe

There&rsquos so many possibilities to this quick skillet sit fry recipe. We use fresh cauliflower because the flavor is fantastic. Make sure the cauliflower is cut to the same size for even cooking. But you can use frozen cauliflower as well, it just doesn&rsquot take as long to cook. Also if you use frozen cauliflower, the stir fry will be a little more watery. All recipe details are in the recipe box below. Enjoy!


Recipe Summary

  • 2 cups cauliflower florets
  • 2 tablespoons coconut or extra-virgin olive oil, divided
  • 1 sliced red onion, divided
  • 4 minced cloves garlic, divided
  • Coarse salt

  • 1 julienned large carrot
  • 1/2 diced (stemmed, seeded) red bell pepper

  • 2 tablespoons fresh cilantro leaves

Pulse cauliflower florets in a food processor until finely chopped.

Heat 1 tablespoon oil in a large skillet over medium heat. Add 1/2 sliced red onion and 2 minced cloves garlic and cook, stirring, until tender, about 6 minutes. Add cauliflower and season with coarse salt. Stir in Cleansing Broth and steam, covered, until broth has evaporated and cauliflower is tender, about 6 minutes. Transfer to a bowl and cover.

Wipe pan and heat 1 tablespoon oil over medium-high heat. Add 1/2 sliced red onion and cook, stirring, until tender, about 5 minutes. Add 2 minced cloves garlic, ginger, and chile and cook 1 minute. Add broccoli florets, carrot, and bell pepper and cook, stirring, until tender, about 5 minutes. Season with salt. Remove from heat and add lemon juice.

For each serving, top cauliflower with vegetables and sprinkle with 1 tablespoon pumpkin seeds and 1 tablespoon cilantro.


Stir-Fried Cauliflower (Side Dish)

This Stir-Fried Cauliflower is one of my all time favorite side dishes. As the Cauliflower is barely cooked and stir-fried, it is quick and easy to make.

And without losing too much of the essential goodness of the vegetable. The crunchiness is totally awesome, especially in a side dish, which usually are not crunchy.

Best to use for this recipe is most definitely fresh Cauliflower florets. Not frozen as you will only end up with a mushy business.

The dish also looks great with the browned pieces of Onion in between. I normally have a savory and a sweet side for dinner.

And seeing as the starch is normally white as well (potatoes, rice, pasta), the bit of browned onion helps balance my colors on the plate.

Of course, I like colorful, or at least different colored vegetables on my plate ! My son does not really like cauliflower all that much, but he always enjoys this side dish.

I grew up with cauliflower being served with cheese sauce over &ndash that&rsquos it ! Even during my first couple of years of married life, I kept on making the same cauliflower with cheese sauce as a side dish.

However, we all grow up (some or other time!) and start to experiment with food. Now I have quite a lot of cauliflower recipes.

Depending on the main dish, it will determine how I cook an serve the cauliflower if it is on the menu that day.
