  1. In a frying pan, melt the butter over a medium heat. Add the garlic and mushrooms and cook and stir for 4 minutes. Add the wine and bring to a simmer until reduced by half. Add the cream, herbs and seasoning and simmer for 5 minutes. Remove from the heat and serve immediately.

I would have given this a 5 star for sure except I had to add more liquid to my mushrooms. Other than the fact that I had to use dried parsley I followed the recipe's ingredients and very much enjoyed this with my steak dinner! Yummy stuff! Thanks, MaryDavies!-21 Feb 2015

Recipe Summary

  • 1 tablespoon vegetable oil
  • 4 skin-on, bone-in chicken thighs
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper
  • 8 ounces cremini mushrooms, sliced
  • ½ onion, chopped
  • 6 cloves garlic, thinly sliced
  • ½ cup dry white wine
  • 1 ½ cups chicken broth
  • ¼ cup heavy cream
  • 1 pinch salt and freshly ground black pepper to taste
  • 1 tablespoon chopped fresh parsley, or to taste (Optional)

Heat vegetable oil over medium-heat in a large skillet. Season chicken thighs on both sides with thyme, oregano, salt, and pepper. Place thighs, skin-side down, into the hot skillet and cook until browned, about 8 minutes. Flip thighs over and brown other side, an additional 8 minutes. Remove thighs from skillet onto a large plate, and set aside. Reduce heat to medium-low.

Add mushrooms to skillet and cook until softened, 3 to 5 minutes. Stir in onion and garlic cook, stirring frequently, for an additional 2 to 3 minutes. Pour in white wine and scrape browned bits off the bottom of the skillet. Simmer until wine is reduced by half, about 2 minutes. Stir in chicken broth and allow mixture to come back to a simmer.

Return chicken thighs to the skillet, and cook, covered, until chicken is no longer pink at the bone and the juices run clear, about 15 minutes. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C). Stir in heavy cream and cook until just heated through, about 1 more minute. Adjust salt and pepper and sprinkle with fresh parsley just before serving.

The best part about making this garlic cream sauce is that you don’t have to actually measure the herbs, cheese and spices. SImply add it to the recipe as per your taste.

Could somebody get me a straw? I could just drink up all the goodness in this one pan chicken with garlic mushroom cream sauce and not feel one bit bad about it. Plus this little bit of wonderful saved me in a busy evening scrape&ndashwhich makes me love it even more.

You know those times you&rsquore just gonna &ldquorun out&rdquo for a minute? That was me yesterday. Logan needed his glasses from the optometrist office 20 minutes away and we jetted down there after school for a quick pickup. It was 30 degrees and I didn&rsquot even have a coat on.

We were just going to be a second.

We got the glasses and headed back to the car. I turned the key. Click. Like a lightbulb going out, the dashboard panel did a little flash and she was dead. As in rock-in-the-parking lot.

And if you don&rsquot know this about us, we don&rsquot live near family and most of our friends live an hour away so there was no one to call but my husband at work (who was also 45 minutes away).

I went back in to the optometrist&rsquos office and Jean our friendly receptionist helped me find a tow truck and even gave the kids a snack. Big shout out to Jean. We love her.

I watched the car head down main street on a rollback with (get this) one man driving and another one casually riding in the driver&rsquos seat of my car. I thought that was slightly hilarious. In small town Kentucky we can do whatever we want.

So this little fiasco shaved over an hour off my evening routine. And when we got home there I was with my kids and my husband looking at me like lemmings: Waiting for dinner to magically appear.

I know this happens to you because you tell me about it all the time. You feel like you&rsquore constantly asked to pull dinner out of your&hellipwell, you know&hellipat the drop of a hat.

But luckily I had this recipe for chicken with garlic mushroom cream sauce on my meal list for the week and had all my ingredients on hand (thanks to my Surefire Grocery Store Strategy) so dinner wasn&rsquot nearly as stressful as it could have been.

And that makes me feel like a winner even if nothing else went smoothly that day.

This recipe is adapted from my friend Jo Cook&rsquos

If your crew isn&rsquot a fan of mushrooms, you could swap in another vegetable they like&ndashsmall broccoli florets cooked a few minutes until they soften or even zucchini or squash would work in here. It&rsquos the sauce that does the heavy lifting and oh&hellipthe sauce. Just give me a glass of it. I&rsquoll drink it.

It&rsquos a perfect blend of rosemary, garlic and salt. Gosh I love salt.

Plus it only needs one pan and a plate to set the chicken on for a few minutes, and takes less than 30 minutes to make. I think I did it in about 20.

I serve this over buttered egg noodles but rice or even a small pasta like orzo would be great for soaking up the sauce.

Clean 1 pound small button mushrooms. If they are large, halve them or quarter them.

Melt 1 tablespoon butter in a frying pan and heat 1 tablespoon oil with it. Add the mushrooms and sauté until the mushrooms are browned and have shrunk.

Make the sauce: While the mushrooms are cooking, in a smaller frying pan, heat 1 tablespoon butter and cook 1/2 cup finely chopped onion until it just begins to turn brown. Add 1 to 2 cloves minced garlic and sauté for 1 minute.

Stir in 1 cup heavy cream and bring to a boil. Cook until slightly reduced and thick. Stir in 3 tablespoons chopped fresh parsley, 1/2 teaspoon lemon pepper, 1/4 teaspoon salt or to taste, and a few drops Worcestershire sauce to taste.


WATCH HOW TO MAKE OUR MUSHROOM FETTUCCINE (1 MIN):

Second: We throw in the mushrooms, and our garlic butter mushrooms become a creamy sauce. Add a little cream, add the rest of the butter (again, high quality, good-tasting cream and butter go a long way here which is why we are using Land O Lakes® for both). Now just stand there and watch, mesmerized, as it melts together. Very important step. Season with salt and pepper, and that’s literally all there is to it.

Finally: We toss our creamy sauce in with the hot fettuccine. A handful of finely grated Parmesan here and a little bit of reserved pasta water there are going to help the consistency get just right. As in: creamy, but not gloppy luscious, but not overwhelming.

At this point I recommend just grabbing your tongs and tossing it all around again and again and again and watching with pure delight as it all comes together. It’s hot, steamy, and SO GOOD. Honestly, this is mega date night material.

Finishing touches: Parsley (always! need that green) and a dusting of fresh cracked black pepper.

If you want to be especially fancy – it is date night, after all – you can add a drizzle of truffle oil (!!) to the pasta. Just a tablespoon or two will do the trick.

And suddenly you’re working with restaurant-level deliciousness in a matter of 30 minutes or less. Recommended eating scenarios include as a side for some nice pan-seared chicken or steak, as its own thing with a green salad to fill out the plate, or literally straight out of the pan as you stand in the kitchen in your sweats. I mean, I don’t want to make assumptions about your date nights, but I am Team Fettuccine in Sweats for life.

I know – technically, this probably would have been a better fit for Meatless Monday. It’s a nice way to change up spaghetti and make it something a little more veg-friendly and, um, what’s the word? GAHHHHH?

But when we’re talking about butter and garlic soaked mushrooms tossed with fresh herbs and coated in a creamy sauce all served up on steaming hot pasta – ♡♡♡ – let’s get real. That, my friends, does not need a Meatless Monday. In my world, that can happen any day of the week.

This is not a new conversation around here, but I always feel the need to let you guys know: I haven’t always been a mushroom lover.

Something happened to me a year or two into the food blogging game that made me go from a mushroom h8er 4 lyfe to a Professional Mushroom Eater. I’m, like, 900% sure that that something involved butter and garlic and white wine in a sizzling hot pan that also HAPPENED to contain a few mushrooms? But whatevs.

All that matters is that now I’m on the other side of the fence. I identify with the people of the world who put mushrooms in everything, from enchiladas to sandwiches to date night pasta with goat cheese –> come to think of it, that recipe looks suspiciously similar to this. MOVING ON THO.

Remember when I used bacon fat instead of butter for the sizzling pan of garlic and mushrooms? And then took an ultra close up picture of it for dramatic effect?

You guys. I’m going to derail the conversation for a minute because SAGE. I need to talk to you about Sage.

She’s doing so well! So, so well. It’s been just about a month (or more? sometimes it feels like we’ve had her forever) and every day we get to see a little more of her personality, which is, in two words, ULTIMATE NAPPER.

Her favorite activities, depending on the hour, are laying on the deck in the sun, laying on the deck in the shade, or laying on the deck in the half-sun-half-shade. We get her riled up and running around on the furniture (omg please just ignore me) and she’ll run back and forth, like, two times before settling in – head on pillow, obviously – for her next nap. I throw her balls to fetch in the yard and she doesn’t have one tiny ounce of an idea about what to do with them. I honestly think she doesn’t know how to play.

Last night, we took her to the dog park (the one with the MUD PIT – and yes, you should be silently judging us right now) and she went straight up Wild Girl on us.

WILD. GIRL. One whole hour of Wild Girlness.

I know this Sage essay – five paragraphs makes an essay, right? – has hardly anything to do with Creamy Garlic Herb Mushroom Spaghetti. I know, and yet.

I love using dairy for a little extra creaminess, but sometimes swaps help you create a dish that might be more closely aligned to your food goals.

If you want a completely non-dairy option. I would swap your butter and evaporated milk with vegan butter and plain almond milk. You could also use olive oil instead of butter to cook the vegetables in.

You can use the same ratios here. I would also suggest leaving the cheese out in this case.

Note that your sauce may not be a thick and creamy consistency, but it will still be tasty.
