  • 475ml skimmed milk
  • 1 tablespoon margarine
  • 8 Cheddar cheese slices, cut into pieces

  1. Prepare chips as directed on the packet.
  2. Stir cornflour and water in a small cup until cornflour dissolves; set aside. Bring milk and margarine to the boil in a saucepan, stirring constantly. Reduce the heat and whisk the cornflour mixture into the milk mixture, bring to a simmer over medium heat. Cook and stir until the mixture is thick and smooth. Add the cheese to the milk mixture and stir until the cheese has melted and is well combined.
  3. Prepare chilli as directed on the tin. Pour the hot chilli and the cheese sauce over the top of the cooked chips. Serve straightaway!

We had leftover chili, and my husband loves chili cheese fries so we just had to try this. We thought the whole cheese sauce part was a bit uncalled for so we just made the fries as directed, heated up the chili and poured that over the fries. We then took some shredded cheese (cheddar and sharp) sprinkled that over top and put the whole thing back in the oven until the cheese was melted. We got out a couple of forks and couple of drinks and it was gone in no time......-16 Apr 2010

Because I did not have enough cheese slices to make the cheese sauce for this, I went with Velveeta's Ultimate Queso (which is basically Velveeta melted with Ro-Tel). I used shoestring fries and homemade chili in this recipe. The boys thought that I was the best wife/mother ever. GREAT boy food and excellent for a mother who just wants to make a quick Sunday treat for her boys.-03 Jun 2012

We love chili cheese fries. Instead of the whole process of making cheese sauce I just sprinkle Monteray Jack and cheddar cheese, crumbled up bacon and jalapeno peppers or green onions and throw it back in the oven until the cheese melts. Love it.-03 Oct 2010

You’ll need:

  • 1 small tin (7oz/198g) diced green chilies, mild and fire roasted if you can find them (OPTIONAL) (I used to just hand chop long green chilies that I found at my local high street market)
  • 1-2 TB chilli spice mix (I use dry cumin, oregano, smoked paprika, garlic, chipotle chilli – you may find peri peri easier to find – and cinnamon)
  • 1.5 tins of crushed tomato (A tin is usually 400g. In the US, I use 3 8oz tins)
  • 1 cube dry beef stock or 1 TB concentrated beef stock (Knorr have fab little jelly pots of beef stock that work well)
  • 1 cup shredded/grated carrot
  • 1 small tin cannellini beans (That’s about 200g or 8oz. You could use a large 400g tin if you like lots of beans. If you prefer kidney beans, go for it, but I’m not a fan of the skins on them)
  • 2 heaped tsp cane sugar
  • 1 cup roughly chopped fresh coriander/cilantro (seems like a lot, but really it’s just two handfuls. Alternatively, use 1 TB of squeezy tube or a large chunk of frozen chopped)
  • 1-2 TB refried beans from a tin
  • Dash of Worcestershire Sauce (OPTIONAL at the end)
  • Salt and Pepper to taste
  • 2 cups shredded cheese (or more!). I prefer non-greasy cheeses like double Gloucester or Red Leicestershire as a topping.
  • A few TB crème fraîche or soured cream (OPTIONAL topping, but so delicious, it’s worth a try)
  • Salted corn tortilla chips (Optional, but yummy)
  • 2-4 flour tortillas (Optional, if your kids like a wrap, like mine. You can use white rice if you prefer, and you can make a pot while the chilli is cooking)

  • Chips (enough to serve 4 people)
  • 2 tbsp butter
  • 2 tbsp plain flour
  • 500ml milk
  • 200g mature cheddar
  • 1 tsp garlic granules (optional)
  • 1/2 tsp salt
  1. Grate the cheese
  2. Begin to cook your chips as you normally would - I often just use oven chips for this recipe - so, cook as per packet instructions (or make from fresh if you'd prefer)
  3. Whilst the chips are cooking, heat a non-stick saucepan to low heat
  4. Add in the butter until it has melted
  5. Then tip in the plain flour, stirring with a wooden spoon until a paste forms
  6. Cook this paste on low heat for 2 minutes (stirring throughout)
  7. Next, GRADUALLY add milk - a little at a time. As you add the milk in, stir continuously to mix with the paste. You're aiming for a smooth sauce, so please don't add all the milk in at once, take your time to combine the paste and milk until smooth (as the milk heats up it'll help to melt the paste a bit too).
  8. Once all the milk has been added, gradually begin to add in the grated cheese, stirring to melt as you do so
  9. Cook for 3 more minutes, until the sauce is thick and smooth
  10. Sprinkle in the garlic granules (if using) and salt - stir to combine
  11. If the sauce is too thick, add some more milk
  12. Once cooked, turn the heat off
  13. Once the chips are cooked, pour the cheese sauce all over them, and enjoy!

Cheesy chilli nachos

In a medium frying pan, fry and crisp the bacon, chorizo and beef mince. Add the green pepper, red onion and chilli and sauté for 2-3 minutes, then season to taste. Add the stock cube and paprika and mix well.

Remove from the heat and stir in the sour cream, sweetcorn and kidney beans. Tip into a round casserole dish and mix in 80g mozzarella and 80g red Leicester. Mix thoroughly, then top with the remaining cheese and bake at 200°C/fan 180°C/gas mark 6 for 18-20 minutes. Serve with the tortilla chips.


Chilli con carne

Chop the bacon into small pieces then, over a medium heat in a large pot, sauté it until cooked and the fat is released into the pot. Remove the bacon and turn the heat up to high.

Add the beef mince to the pan and brown, making sure the meat has caramelised before adding the onion. If extra oil is needed, add some canola oil.

Fry until the onions are cooked then add all the dry spices, the chillies, garlic and the bay leaf.

Add the fried bacon to the mince and spices and cook for 5 minutes.

Add the chopped tomatoes and simmer until some of the liquid in the canned tomatoes has cooked out, intensifying the flavour in the chilli.

Pour in the stock and combine gently. Simmer for 1 hour, taking a peek every now and again to ensure the sauce doesn't cook dry. Add more water or stock if that's the case.

After an hour, the meat will be tender and the sauce intensely flavoured.

Add the drained red kidney beans to the chilli and cook for another 30 minutes.

After the final 30 minutes of cooking, turn off the heat and allow the chilli con carne to cool slightly in the pot. For a deeper flavour and thicker texture, leave the chilli to cool overnight and reheat the next day.

Garnish with fresh coriander, a sprinkling of Cheddar cheese and a dollop of sour cream. Serve with rice, nacho chips or stuffed into baked sweet potato.

Cook's note: For delicious baked nachos-and-chilli, layer the chilli con carne between layers of nachos chips and grated Cheddar. Bake at 200ºC for about 10 minutes, until the cheese is melted and the nacho chips just start to burn a bit at the tips. Serve it with dollops of sour cream, a sprinkling of fresh coriander and for drinks, shots of Tequila, Margaritas or ice cold Corona beer.

Clement Pedro strikes a balance between rib-sticking fare you can really get stuck into and experimental recipes that take accessible ingredients to next-level status. Clem can do pretty much anything – and so can you with his recipes.


How to Make It

Starting by cooking onions and garlic with a little oil in a large pan until softened.

Add the minced beef and cook until browned - breaking up any lumps with a wooden spoon. Then pour in the red wine and simmer for a few minutes.

Next, add beef stock, Worcestershire sauce and a little honey.

Then chop two red bell peppers and add those in too.

Add in four tins of good-quality chopped tomatoes and stir.

Next is the spices. We have smoked paprika, cumin, ground coriander, chilli powder (more or less depending on how hot you like it), ground ginger, salt and pepper and mixed herbs. Chris also adds in a freshly chopped red chilli at this point too.

Then add in tomato puree (paste), tomato ketchup and chipotle paste.

Bring to the boil, stir, then turn down the heat and loosely cover with a lid. Simmer for about an hour, giving it a stir every 10-15 minutes.

After an hour, add in some tinned mixed beans and kidney beans, stir, and cook for a further 20 minutes, uncovered (this is a good time to put your rice on to cook too).

Right before serving, stir in a big handful of chopped fresh coriander (cilantro).

Then serve with boiled rice. If you like you can also serve with soured cream, homemade guacamole, tortilla chips (we love the blue corn chips) and an extra sprinkling of fresh coriander and finely chopped red chillies.

I know it seems like a long list of ingredients, but most of it gets thrown in together, and you probably have most of the ingredients in your cupboard already.

Although we often serve it with rice, it's also great with pasta, on tortilla chips or jacket potatoes. I even sometimes use a portion from the freezer to make a quick, spicy lasagne.

Tex-Mex Style Queso con Carne Dip

Friday Night Favorite

Growing up as a kid in my house, Friday nights were all about simple and easy dinners.

That meant, my mom would make some queso, or cheese dip as she would call it, get a table cloth and lay it out in front of the TV while we watched T.G.I.F. (Am I showing my age?) and we would all have a little bit of a Tex-Mex picnic right there.

That was Friday night dinner and it was perfect!

Queso Dip

Queso is a warm dip you can find at any Tex-Mex restaurant around Houston and other areas of Texas, usually for an additional charge served as an appetizer, with complimentary chips and salsa.

If the chips and salsa are not free, I suggest eating at another restaurant. In my experience that is never a good sign. Moving forward, there are several ways to enjoy your queso other than just a dip.

You can use it as a condiment for many Tex-Mex dishes, such as tacos, nachos, fajitas, and enchiladas just to name a few.

Mom’s Queso

My mom’s version of queso was made with Velveeta and a can of Rotel. Velveeta is a type of processed cheese and Rotel is canned tomatoes with chilies.

I am one who likes to keep things real in the kitchen as much as possible, however sometimes real food just doesn’t work out for certain things, like queso.

I’ve tried a mix of cheddar and Monterey jack cheese, and while good, the texture was just off. Nothing comes close to the creaminess of Velveeta cheese and is what is most commonly used here for queso in Texas.

I did however use fresh chilies for this recipe. I have to add some freshness in somewhere.

A Favorite at Every Gathering

Queso or Queso con Carne always makes an appearance at my family get-togethers no matter if we are making Tex-Mex food or not. It’s just what we do here in Texas. Queso should be served warm.

The best way to do this is by pouring the dip into a slow cooker to keep warm for your guests. Serve with tortilla chips.

How to Make Queso con Carne

Sauté the chiles, onions, and chorizo. Add the cubed Velveeta cheese. Mix in the Velveeta and stir as cheese melts. When cheese is fully melted add milk to get the desired consistency. Add the tomatoes and cilantro and mix into your queso. Queso con carne ready to serve.

Heat the olive oil in a large saucepan over medium heat.
Add onions and garlic, cook until soft and golden.
Add the ground beef and cook until fully brown. Transfer meat to a colander. Drain and then return the meat to the saucepan.
Tip in red pepper, beans, sweet corn and chilli con carne spice mix.
Continue to cook for about 5 minutes, stirring occasionally.
Pour in the diced tomatoes together with their juice into a saucepan. Bring to aboil and season to taste.
Reduce heat to low, put a lid on and leave to cook for a further 10 minutes.
Remove from the heat and cool thoroughly.
Spread the trail chilli mixture on dehydrator trays covered with non-stick sheets or parchment paper.
Dehydrate at 63C/145F for 8-10 hours until brittle.
Divide the dried meal into equal portions (about 1 cup each) and pack them into medium-sized zip lock bags.
