  • 180g spicy salsa
  • 65g crunchy peanut butter
  • 180ml light coconut milk
  • 2 tablespoons fresh lime juice
  • 1 tablespoon soy sauce
  • 1 teaspoon sugar
  • 2 tablespoons freshly grated ginger
  • 900g skinless chicken thighs
  • 70g chopped peanuts, for serving
  • 2 tablespoons chopped coriander, for serving

  1. Combine the salsa, peanut butter, coconut milk, lime juice, soy sauce, sugar and ginger in the bowl of a slow cooker; mix well. Place the chicken thighs in the sauce; spoon mixture over chicken to coat.
  2. Place the lid on the slow cooker and set to Low. Cook until the chicken thighs are tender and the sauce has thickened, about 8 to 9 hours. Garnish with peanuts and freshly chopped coriander before serving.

I have been on here for years and have yet to leave a rate. This recipe really deserved it. 5 stars from a very critical cook. I made a few adjustments based solely on my own personal taste, but this was 5 stars before I ever got near it. My tweaks were substituting 2 tablespoons of siracha for the 3/4 cup salsa, using creamy peanut butter, using a full can of full fat coconut milk, 3 tablespoons of soy, & leaving out the sugar. again these were tweaks to adjust to my own taste.I served a bed of fresh spinach, topped with bean sprouts, topped with Jasmine rice, then the chicken, then the sauce . I have to agree, I was skeptical. The only thing I did differently is I used mild salsa (because that's what I had) and I used natural peanut butter (because that's all I buy). It was good! I will definately put this in my rotation. It's not strictly Thai if you are a Thai food conniseur, but it is a really great kids-friendly recipe, especially if they are not used to the flavors. My 2 year old loved it. I love Thai food, so it was a wonderful middle ground between something I appreciate as Thai and something she will eat. Great!-05 Jul 2011

This was good but the peanut butter flavor seemed to get cooked out of the dish in the slow cooker. So, am going to add a little more. This also needs a little salt added to it after cooked. Other than that, this is a really good dish!-17 Apr 2011

When you take a bite of this peanut chicken dish, you will be greeted with an amazing range of flavors from the peanuts, spices, and coconut cream. There is a bit of spice to this dish, so expect a bit of heat after the hit of flavors. This dish is always a huge hit when I make it for the family.

If you have tried out our peanut chicken curry, then you will be familiar with some of the flavors. However, this dish is a bit lighter and is less rich in peanut flavors. I love both recipes, so be sure to give them both a try.

This dish will make enough to feed roughly four to six people. I highly recommend that you serve it with some additional side dishes such as steamed rice or rice noodle.

How to make Slow Cooker Hoisin Peanut Noodles

So the evening before I mixed the suce together and put it in the fridge. That way it was ready for me in the morning.

The sauce is a bottle of hoisin sauce, creamy peanut butter, soy sauce, ginger and garlic paste, and some fresh lime juice.

You could also add Sriracha for some spice. Oh, and if you prefer you could always use fresh minced garlic and ginger instead of the paste.

In the morning all I had to do was place two pounds of pork (or chicken) in the slow cooker and top with a diced onion and shredded carrots.

I used boneless pork chops and took some help from the store and bought pre-shredded carrots.

Pour the sauce over the meat and veggies and give it a little stir to make sure the sauce is evenly distributed.

Then turn the slow cooker to low.

After 6 to 8 hours of cooking away low and slow, shred the pork (or chicken) right in the slow cooker.

We will be adding some rice noodles to this, but first you need to cook them.

A TRUE Fix It and Forget It Dinner

Not all slow cooker recipes live up to the “Fix It and Forget It” hype, but this one really does!

What I mean by the hype is that you can’t necessarily dump all of the ingredients in the crock pot, set the timer and return home to a perfectly cooked dinner with all slow cooker recipes. A lot of times you need to pre-cook the meat or saute the vegetables first. But this Slow Cooker Thai Chicken recipe truly captures the spirit of what most people envision a perfect crock pot dinner to be. The ingredient list may be a tad bit lengthy, but the whole thing takes less than 20 minutes of preparation time.

It makes the perfect back-to-school dinner, especially if you have kids in multiple different activities. If you set aside just a bit of time in the morning, you really will have a perfectly prepared dinner come 6 o’clock.


This recipe is the slow cooker equivalent of the Sheet Pan Peanut Chicken and Vegetables I posted last week. In the less than ten days since it was posted I got more than a dozen emails asking for a slow cooker version of the recipe. I love this about you guys, you know exactly where I am headed with recipes! I replied saying it was already scheduled for today and you guys were so excited. This brings me to one of my favorite things about how engaged you all are.

This Slow Cooker Thai Peanut Chicken intentionally calls for only a half a can of coconut milk because every time we make this we use the leftovers in our rice. What we do is cook our rice as you would any regular rice, but replace some of the water with the rest of the coconut milk and usually whatever lime juice is left in the lime we are using in the recipe. Served with some roasted Garlic and Ginger Carrots this is a meal your family will enjoy for a long time to come.

The best part of this is also that it is almost completely hands off. You start the chicken in the slow cooker and when you are about a half an hour away from dinner you put your carrots in the oven and make the rice in your favorite rice cooker. Anytime meal prep can be this passive is a win, there won’t be anything cooking on your stovetop for you to watch.

Some tips and tricks for this This Slow Cooker Thai Peanut Chicken:

  • You can cut up the chicken and add the ingredients into a large ziploc bag/bowl the night before if you’d like then you can just put it in the slow cooker in the morning.
  • If you are making this fresh in the morning you can brown the chicken before cutting it up and it will add a deeper flavor.
  • Using chicken thighs can keep the chicken moister and allow for you to cook it longer (7-8 hours on low) if you will be away all day. I recommend boneless skinless thighs for this since the skin would add a lot of rendered fat to the sauce.
  • There are some pre-made garlic and ginger pastes on the market that you can keep on hand if you find that you don’t want to have to keep fresh ginger and garlic in your kitchen.
  • You can easily make this dish on your stovetop or in your oven as well. Add the ingredients to a dutch oven and cook in the oven at 375 degrees for 30 minutes or on your stovetop (covered) on medium heat for 20-25 minutes.

Tools Used in the making of this Slow Cooker Thai Peanut Chicken:
Low Sodium Soy Sauce – I find regular soy sauce much too salty, remember you can always add salt but you can’t subtract it. Starting with low sodium allows you to alter to your tastes if necessary.
Coconut Milk: I stick to the full fat for the thickness and creaminess in the dish, if you want to stick to a lower fat alternative you may want to cook this on the stovetop as it may break the sauce in the slow cooker.

My New Slow Cooker: This recipe was made in this slow cooker. For larger roasts I also brown the meat in the insert and not lose a bunch of the flavor by transferring the meat and leaving the browned bits behind. If you’re thinking of a new slow cooker, consider it if your budget is open.
