BAKED SWEET POTATOES

Jacket potatoes are a proper crowd-pleaser, but these have a little nutritional advantage: sweet potatoes are a non-starchy carb, meaning they could towards your 5-a-day, plus they provide loads of nutrients including the mighty vitamin C.

Spring is right around the corner and I’ve never been so desperate to get outside. Being stuck at home with five little kids is exhausting. Between cleaning and getting everyone dressed and fed, the entire day slips away without getting anything accomplished.

Unfortunately, all of my freezers are empty too. We ate the healthy stir fry “packs” that I froze for the crockpot/Instant Pot (the honey garlic chicken and snow peas was my favorite) and trying to figure out what to make for dinner tonight is stressful enough, let alone making more freezer meals. Happy new year! I know that one of the most popular new years resolutions is to eat healthier and lose weight – which I think is great – but I always take some time at the beginning of the year to recommit to cooking dinner for my family. With the hustle and bustle of the holiday season, I tend to get out of my routine and family time around the dinner table has been a little lacking. Cut back on salt

Too much salt can raise blood pressure, which is a leading risk factor for heart disease and stroke. Most people around the world eat too much salt: on average, we consume double the WHO recommended limit of 5 grams (equivalent to a teaspoon) a day.

Rather than top a salad with bagged croutons, whip up this Tuscan version with toasted pita bread.

There’s the usual good-alone-but-better-together suspects expected in something called “Mediterranean”: tomatoes, cucumbers, feta, and olives. The olives are key since the fats in them help your body absorb the nutrients in the veggies.
