RECIPE PREPARATION Pineapple muffins:

Mix the sugar with the egg and add the milk and oil. Homogenize then add flour and baking powder. Homogenize and add the pineapple cut into small cubes. Fill the muffin tins about three quarters with the composition obtained. Put two pieces of pineapple on top and put in the oven until nicely browned. Garnish with whipped cream.

For the dough, let the pineapple drain well in a sieve.

Cut the marzipan into small cubes and place in a bowl. Add butter or margarine and mix the ingredients using the mixer, whisk until a homogeneous cream is obtained. Stir in the sugar and powdered sugar, then the eggs, one at a time (each egg is beaten for about half a minute).

Mix the flour with the baking powder, sift and incorporate into the cream in small portions, at medium speed. Stir in the chopped pineapple and milk at the end.

The composition is poured into muffin tins (greased and lined with flour). Place the form in the oven and bake.

The muffins are left in the molds for 10 minutes, then they are detached (possibly using a knife) and left to cool on a kitchen grill.

Depending on your preference, the muffins can be decorated with whipped cream and grated chocolate.

    After countless attempts at muffin recipes, it is definitely in the first place, being absolutely delicious due to the multitude of flavors that blend perfectly, the result being divine.

    Even if it has more steps in preparation than most muffin recipes, you will not be disappointed in the end.

    For the beginning, prepare all the ingredients (the liquid ones must reach room temperature, before mixing), heat the oven to 180 degrees and prepare the muffin tray with special muffin papers. The recipe is calculated for 12 muffins.

    Pineapple caramelization

    1. Drain the pineapple from the compote and cut the pieces by about 2-3 cm.
    2. In a medium frying pan, melt the butter over low heat, then add the rest of the ingredients: sugar, cinnamon, vanilla, cloves and rum essence, stirring constantly until everything becomes a homogeneous sauce.
    3. Add the pineapple, mix with the sauce and leave to caramelize for about 10 minutes, stirring occasionally.
    4. At the end, remove the caramelized pineapple on a plate, removing the rest of the ingredients, and leave to cool.

    Preparation of the composition

    1. Melt the butter in a Teflon bowl over low heat. It can also be melted in a bain marie or in a microwave oven, in a heat-resistant dish. After melting, leave to cool.
    2. Mix the solid ingredients in a bowl: flour, sugar, baking powder and vanilla sugar.
    3. When the melted butter has cooled (it can be warm, but not hot), mix the liquid ingredients in a separate bowl: milk, eggs, melted butter and pineapple compote.
    4. Pour the liquid ingredients over the solid ones, stirring very little, until smooth.
    5. Add the almond flakes and the pineapple, mix a few more times, just enough to incorporate them all.
    6. With a larger spoon or a scoop of ice cream, put the composition in the forms of muffins in the tray.
    7. Place the tray in the preheated oven and leave it for 20-25 minutes at the same temperature, 180 degrees, until the muffins turn brown.
    8. After removing the muffins from the oven, leave them in the pan for a few more minutes to cool, then remove them on a grill for complete cooling.

    2. When the muffins are almost completely cooled, garnish with warm icing.

    They can be served without icing, but we still recommend this last ingredient for a more complex aroma.

    Overturned cakes are a special dessert, very tasty and no less good-looking. And, because my pineapple rings were bigger and didn't fit in the muffin tray cavities, I cut them out, and blended the leftovers with canned juice and made a light pineapple puree, which I used. instead of simple juice.

    It's a really special dessert, which is not difficult to prepare and you will definitely like it.
