Nut cake

The lard and butter should be at room temperature, eventually we can heat them a little before use, but be careful not to melt them! Mix the butter and lard with the sugar until they become frothy, add the egg, rum essence and sour cream then mix. Sift the flour together with salt, baking powder and cocoa. Gradually add the dry ingredients over the others. I gave up the mixer and mixed it by hand, and it went really fast.

Divide the dough obtained into two equal parts. We prepare a baking tray measuring 25 / 35cm, we line it with butter and flour. Spread a sheet of dough and put it in the pan. Let the other half cool.

Grind the walnuts finely. Beat the egg whites with a pinch of salt. Add the sugar in the rain, one tablespoon at a time and mix well until you get a well-bound meringue. Leave the mixer aside and add the walnuts, stirring with a spatula with movements from bottom to top. Over the sheet in the tray we spread the apricot jam, you can use a different jam, but I chose this one being more sour, and especially because I like it a lot in combination with walnuts. Over the apricot jam we put the egg whites.

We spread out sheet number two. Here was the more delicate part, because although I managed to stretch the sheet somewhat well, I didn't manage to distribute it evenly in the tray ... and there were some small gaps on the edge. But after I added the glaze, you couldn't even notice anything wrong :)

Bake the cake for 45-50 minutes on medium heat (180 degrees). 15 minutes before the cake is ready, we start the icing. Mix the yolks well with the powdered sugar until it triples in volume. I used the manual mixer ... that is, the hand and the target:)) ... so I sweated a little, but the result was the expected one - remember that it is possible. We take the cake out of the oven and spread the icing evenly over it, and we should perform this operation as quickly as possible because the icing hardens quickly, the cake being warm.

When it is completely cooled, we portion it according to preference and we can decorate it with whatever we have at hand. I chose some candies (not pebbles: P) and pieces of walnuts.

P.S. I also reduced the amount of sugar, but if you like it sweeter, you can add another 50 grams to both the egg whites and the yolk icing.

These cute and delicious cakes will definitely be on our holiday table. They are made quickly and kept in the freezer so you can prepare them some time in advance.

These cakes can also be made in the fasting version if you replace the butter with margarine.

  • 15 large prunes
  • 15 pieces of walnut kernels (from 15 walnuts :))
  • 125g butter (margarine in fasting version)
  • 100g old
  • 15 tablespoons water
  • 100g ground nuts
  • 150g ground biscuits
  • 40g chocolate

1. Insert a walnut kernel into each prune. If it is not whole, assemble it into quarters. You can cut the plums a little to make your work easier.

2. Mix the sugar with water and bring to a boil in a saucepan. When it boils and the sugar has melted, add the butter and leave it to melt. Remove from the heat and add the chocolate, stirring quickly until smooth, then add the walnuts and ground biscuits.

Let it cool just enough to model with it (composition).

3. As with plum dumplings, take a little of the composition, place a plum in the middle and shape the balls by hand.

They are easy to make and you don't have to grease your palms with anything beforehand.
