Put on the fire, the sugar and the 8 tablespoons of water and let it boil until you get a syrup.
Mix the egg whites with a pinch of salt. Over the egg whites, gradually add the hot syrup, stirring constantly.
Rub the yolks with the oil, then add them over the egg whites. Add flour mixed with baking powder and finally the essence.
Divide the composition in two and mix one part with the 2 tablespoons of cocoa.
Place baking paper in the trays and then put a layer of white composition, a layer of brown composition and so on, until we finish the two compositions.
Put the trays in the hot oven for 35-40 minutes. We also do the toothpick test. Remove the trays from the oven and leave the cakes in the trays for a few minutes.
