Pizza with spinach and egg

Preheat the oven to 200 ° C. Grease the pizza top with tomato sauce.

Pizza with ham and mushrooms

* 1 pack with 3 small pizza tops
* 1 green onion link
* 10-15 spinach leaves
* 200 g fresh or canned mushrooms
* 200 g of ham
* 2-3 slices of kaizer
* 3 eggs
* 300 ml milk
* 4 tablespoons oil
* thyme
* green or dried basil
* pepper 4-5 tablespoons sweet ketchup
* 150 g of cheese or parmesan
* 1 tablespoon margarine for the tray

1. Peel, wash and finely chop the onion and spinach. Do the same for mushrooms, if you use such fresh vegetables, and if they are preserved, drain them and cut them into slices. Cut the ham and kaizer into cubes.
2. In a pan with 1 tablespoon oil, simmer onions, spinach and fresh mushrooms. Add the ham and kaizer and continue to simmer for 1-2 minutes. Mix the ketchup with basil, thyme and pepper to taste.
3. Pass the pizza tops through the milk, then through the beaten egg and fry them one by one, on both sides, in the remaining oil.
4. Grease a large tray with margarine. Place the tops and cover them with the mixture of vegetables and sausages. Pour over the remaining beaten eggs and spiced ketchup, then sprinkle with grated cheese.
5. Put the tray in the preheated oven, over medium heat, for 5-10 minutes. Bring hot pizza to the table, along with pepper and ketchup.


  • Before you chop the tomatoes for the chicken dish with spinach, you can peel them. To make this as easy as possible, boil a saucepan with water and when it starts to boil, scald the tomatoes (put them in hot water and take them out in five seconds).
  • You can use in the preparation 1 bunch of green onions and 1 bunch of green garlic.
  • If you want to add a special taste and texture to the dish, add a diced sweet potato.

Dough:
I made it from my universal dough and I always have it in the fridge.

1 kg of flour
600 ml of water
25 g of fresh yeast
1 teaspoon sea salt

I mix everything on the robot (it has a dough hook), cover the bowl and put it in the microwave. There is the best place to grow, of course it is not started.
When it has doubled in volume, I press it down and put it in the fridge, where it stays for 2 weeks and I always break a piece that I need at the moment. It can be allowed to grow, but for a pizza it is no longer needed.

a handful of fresh or frozen basil
a handful of nuts
1/2 cup extra virgin olive oil

Put all the ingredients in the robot and pulsate until the desired consistency is obtained.

Spinach omelette

Ingredient:

250 g of fresh or frozen spinach cut into small pieces
2 tablespoons olive oil
half a cup of chopped onion
a clove of crushed garlic
4 tablespoons sour cream
Beat 8 eggs
salt and pepper to taste
half a teaspoon of thyme leaves
2 tablespoons grated Parmesan cheese

The preparation is simple and similar to the frittata recipe: Put the onion and garlic in a pan in which you put the olive oil for 5 minutes. Add the spinach and cook until the spinach is soft, about 5-7 minutes.
In a small bowl, mix the sour cream with the eggs, salt, pepper and thyme until the mixture becomes frothy. Add the egg mixture to the pan and cook and stir so that the eggs blend with the spinach. Fry for another 4-5 minutes and then serve with Parmesan cheese on top.

About frozen spinach

Frozen spinach is commercially available in several forms: burnt whole leaves, shredded and frozen spinach in the form of blocks but also practically in the form of capsules (briquettes) or cubes or spinach cream with cream or flavor additives (I avoid this !). Chopped spinach can also be larger or finer in grain, but this can be solved later with a hand blender or a kitchen processor. The most practical seems to me the spinach frozen in cubes or capsules because it is easily sliced. I take just as much spinach out of the bag as I need and the rest goes back to the freezer.

Frozen spinach is used as such, straight from the bag. It must not be thawed and drained. In addition, in Transylvania and Banat (I am from Arad) I have not heard of spinach made with hardened onions and tomato juice. We do not fry the spinach in any way but we add it to a white sauce prepared a few minutes before. Garlic is the one that is not missing from this creamy spinach puree and is added only at the end (it is not fried because it becomes indigestible and completely changes its taste and aroma).

This recipe for spinach puree with milk and garlic does not take me more than 30 minutes if I use frozen spinach. With the fresh one, the thing is more complicated: it must be chosen by the tails, washed in 3-4 cold waters, then scalded for 1-2 minutes, drained and chopped.

Because I have problems with my stomach, I try to avoid fried foods (especially lentils) and to adapt the classic recipes to a more dietary eating style. Because I like the taste and texture of the sauce white Bechamel (also called rântaș or roux) I have to find solutions to get them without the hardening & # 8211 frying process. Those who do not have such problems and love freshly cooked spinach in the form of food with white sauce and garlic I can see here how this is prepared.

From 500 g of frozen spinach results about 4-6 servings of spinach puree. It depends on how much you like spinach, but in our country it rarely gets cold in the pot.
