We clean the fish of scales and inside.

We wash it well, then we put inside the fish pieces of whole dried tomatoes, a few capers and a few slices of garlic and a little rosemary.

Place the fish in the pan and sprinkle with olive oil, pour a cup of water and white wine, then salt and pepper to taste.

I also added in the tray a few cherry tomatoes cut into slices, 2-3 green onions cut into small pieces and a red pepper cut into slices, to give color.

This time I had the oil from the jar of dried tomatoes, I cut into slices a clove of fresh garlic, a red capsicum and I mixed it with the potatoes.

Garnish: I put the yolks in boiling water and then 30 minutes in cold water to rehydrate, according to the instructions on the package, I chopped the small fennel, garlic and tomatoes as well, then I hardened them in a little butter mixed with oil from dried tomatoes.
