For the edge of the hat you can roll the dough like a thick rope, then stick it to the hat, in the part where it would have the edge, along the head. And tassels can be like a nose, but a little bigger.
For the eyes, cut in two places, on Santa's face, so that you get some depth in the dough. Place a grape in them.
